Cilantro Grapefruit Cooler

Like most people my phone holds most of my life… most importantly my pictures.  I clean my phone archives out at least once a week and have over a thousand photos that I look back at regularly. How can this be? The majority of them are pictures of recipes that I want to make and considering today’s lineup dated back to last March, I figured a year was long enough to be looking at this guy.  I bit the bullet (not hard to do considering I had everything in my fridge), and whipped up this magical concoction.

Cilantro is a top herb contender for me (sorry Jeff!) but I rarely use it in drinks.  Jokes on me, because mixed with a little mint (also a surprising mixture for me) and some citrus this drink hit the spot.  Perfect for the spring season ahead… I’d add this to your list for pool parties in the next few months.

Cilantro Grapefruit Cooler 

  • handful of cilantro
  • 2 mint leaves
  • 3 oz vodka
  • 6 oz grapefruit juice
  • juice from half a lime
  • 1 oz vermouth
  • splash of agave
  1. Muddle cilantro and mint in a cocktail shaker.
  2. Top with vodka, juices, vermouth and agave, and add ice.
  3. Shake until icy and strain into an ice filled lowball glass.
  4. Garnish with a cilantro sprig and lime wheel. Enjoy!

Grapefruit Tarragon Gin and Tonic

Tarragon is a herb that I love but typically forget about…. sorry tarragon!

I’m used to it as a pleasant surprise in salads or chicken dishes, but when I saw it in a cocktail recipe, I had to try it for myself.

Grapefruit Tarragon Gin and Tonic 

  • 2 sprigs fresh tarragon
  • 1 tablespoon coconut sugar (or turbinado sugar or brown sugar should do the trick)
  • 2 ounces fresh squeezed grapefruit juice
  • 2 ounces gin
  • 5 ounces tonic water
  1. Muddle tarragon and sugar in a cocktail shaker and fill with ice.
  2. Add grapefruit juice and gin and shake until icy.
  3. Pour cocktail mixture into an ice filled highball glass and top with tonic water.
  4. Garnish with an extra tarragon sprig and grapefruit slice.

The Gin Hound

I rarely use vermouth but started coming across more recipes that call for it and have started to love the added depth it brings drinks. This refreshing cocktail is easy to make, delicious to enjoy and has an unexpected spin from the vermouth.  I used a Dolin Blanc vermouth for a citrusy, sweet addition that I think you’ll enjoy!

The Gin Hound 

  • 3/4 cups freshly squeezed grapefruit juice (juice of 1 large grapefruit)
  • 1 tablespoon lemon juice
  • 4 oz gin
  • 1 oz sweet vermouth
  1. Juice grapefruits and lemon.
  2. Combine juices, gin and vermouth in an ice filled shaker and shake until icy.
  3. Pour into a crushed ice filled lowball glass and enjoy!

Banker’s Lunch

When I saw this cocktail name, I felt I needed to make it. No particular reason…. I just love anything that references day drinking I guess.

It isn’t stuffy and is an easy drink to whip up and still feel like you did something (juicing a grapefruit is hard work!).

Banker’s Lunch 

  • 1.5 oz vodka
  • 0.5 oz dry vermouth (I used blanc vermouth)
  • 0.5 oz orange liqueur
  • 1.5 oz freshly squeezed grapefruit juice
  1. Add ingredients into an ice filled glass.
  2. Stir and strain into a rocks glass (or if you are lazy like me, omit this step).
  3. Garnish with a grapefruit peel.

Prickly Pear Margarita

One of my favorite cocktails is a prickly pear margarita.  While the taste is amazing, it’s the color that really tops everything off – it’s basically my dream pink scenario.  I first discovered this fabulous cocktail in Vegas at Mesa Grill and have since tried to duplicate it to share on the blog… but I’ve never been able to figure it out (or track down the beautiful produce!), but thanks to Good Eggs, I’ve been able to ship a pound of them to my doorstep for under $2!!

Prickly Pear Margarita

makes 2 servings 

  • 4 prickly pears
  • 4 oz tequila
  • 1.5 oz orange liqueur
  • 1 tablespoon freshly squeezed lime juice
  • 0.5 oz honey
  1. Slice prickly pears in half lengthwise, scoop out the fruit and transfer to a blender.
  2. Puree until liquified and strain into a cocktail shaker.
  3. Add ice, tequila, orange liqueur, lime juice and honey to prickly pear and shake vigorously.
  4. Strain into ice filled glasses and garnish with lime. Enjoy!

* Mix chipotle chile powder with salt for a fun take on a salted rim!
