Hemingway Punch

J and I honeymooned at a place called Jumby Bay and when you arrived on the island, you were greeted with their signature cocktail – Rum Punch.  I proceeded to indulge in them for the next week and still mourn the fact I can’t find something similar stateside… but this drink (with its freshly ground nutmeg and brown sugar syrup) is pretty close to hitting the spot.  IMG_4481

Hemingway Punch

  • 3 oz rum
  • 1/2 oz Luxardo maraschino liqueur
  • 1/4 cup freshly squeezed grapefruit juice
  • 1/4 cup freshly squeezed lime juice
  • 1.5 oz Brown Sugar Syrup (recipe below)
  • Freshly grated nutmeg
  1. Combine rum, maraschino liqueur, grapefruit juice, lime juice and brown sugar syrup in an ice filled cocktail shaker.
  2. Shake and strain into 2 ice filled glasses.
  3. Garnish with freshly grated nutmeg and a slice of lime.

* I quadrupled this recipe and made it a pitcher drink – perfect for guests to serve themselves!

Brown Sugar Syrup 

  • 1 cup dark brown sugar
  • 1/2 cup water
  1. Bring sugar and water to a boil in a small saucepan over medium heat.
  2. Reduce to a simmer and stir until the brown sugar is dissolved
  3. Let cool and store in a fridge up to a month.

What I’m Loving Right Now…

Oprah’s Favorite Things list inspired me to share a few things I’m currently loving…

1. Good Eggs – This grocery service delivers locally sourced food directly to your door (free for orders over $50!).  Their website (and app) are super easy to use, and I love that the “menu” is constantly changing to accommodate the freshest produce and products.  Their costumer service is top notch too – any hiccups with my order and they have gone above and beyond and make things right. Click the link to get a free special treat with your first order!

2. UnRoll.Me – this app is an awesome way to clean up your inbox everyday. It allows you to (easily) go through your inbox and unsubscribe, “roll” or receive certain emails to your account.  Emails that you decide to roll are compiled in one easy to read email a day. Super helpful if you don’t constantly want to be reminded of all of the amazing sales going on every day, or just want to save yourself countless minutes deleting spam.

3. Tac-Oh! – If you are local, I highly recommend you check out the newest addition in Willow Glen.  This high end “Mexican Comfort Food” spot (and sister restaurant to Opa!), has the most amazing tacos and cocktails, and the best nachos… ever.

4. Zara Shoes – I went on a binge a few weeks ago, and have been especially loving these. They elevate the simplest of outfits (re: t-shirt and jeans), but are a lot easier to walk in than heels!

 

5. Din – If your not in the mood for Tacos, and too exhausted to fully cook something with your groceries from Good Eggs, Din is your way to go.  They send all the ingredients/directions (think Blue Apron), of restaurant famous recipes – but everything takes only 20 minutes to make (and not a Blue Apron 20 minutes, which often times means an hour).  Who doesn’t want to make Tacolicious tacos in the comfort of their own home!?

Date Night In – Caribbean Style

Caribbean Jerk Chicken Dinner

I’m baaacckkkk. With the move, J’s 30th birthday celebrations and planning my boss’s big 50th bash, the blog had to go on the back burner (again). But I’m back with some great stuff… so buckle your seat belts folks! (wow that was corny.)

First order of business… one of my favorite meals in awhile – Date Night’s In Caribbean Menu.  From the yummy cocktail (coming Friday), to the epic mango slaw and delicious Jerk Chicken, this is not to be missed.  So forget about the fall season approaching in full force and let’s get to cookin’!

I whipped this meal up during a weekend away at our family friends beach house… and it was great to be able to pre-prep the BBQ sauce and dressing ahead of time, so the day of you can delegate chopping and grilling the day of.   If you don’t have a few days to put the chicken legs together (as the recipe states), you can do what I did – buy chicken tenders and brown them on the stove and bake in the oven with the BBQ sauce or just cook on the stove until warmed through.  A little less messy at the table and still super delicious (the BBQ sauce truly is next level).

Ingredients

Instructions
  1. Whisk together the miso, lime juice, rice vinegar, sesame oil, ginger, honey, salt and yogurt. The dressing can be made a day or two ahead (just cover and store in the fridge).
  2. In a large bowl, combine the remaining ingredients and toss with dressing.
  3. Garnish with peanuts and serve immediately.
