Morning Sunshine!

I always ate breakfast growing up but once I “went corporate” I found it a lot harder to make time for the most important meal of the day…

The solution – smoothies! My sister went on a kick for awhile and made these AMAZING concoctions every morning, but due to my lack of creativity and time I have created a new staple.  

4 ingredients + 1 blender + 20 seconds = filling/tasty start to your day!

So go grab – 1 banana, 2 handfuls of spinach or kale, 1 spoonful of almond butter and about a 1/4 cup of almond or coconut milk…

Mix everything in a blender then add some ice, blend some more and voila!

PS. If you aren’t a greens kinda person, don’t let it fool you – it tastes like a peanut butter smoothie!

Tip: When you’re done rinse your blender immediately add some water a pump of dish-washing soap and put the lid back on to blend for 30 seconds more.  It instantly cleans your blender!

A tried and true recipe: Meyer Lemon Chicken Piccata and Cacio e Pepe with Lemon

I love this chicken piccata recipe and (also) saw this pasta recipe in Martha’s mag last month.  So simple, yet so good!

An easy recipe: Kobe Beef Burgers with Sweet Potato Fries and Honey Mustard Dipping Sauce 

J bought these Kobe patties from Trader Joe’s last month and we’ve yet to make them… All I had to do was get some buns, throw together a few toppings and made a quick batch of sweet potato chips with dipping sauce and voila! Dinner on the table in under 30 minutes! (Disclaimer: These did not turn out super good…would not recommend 🙁 Also, please don’t judge the too small hamburger buns.)

Sriracha Sour Cream Dip:

1 cup Sour Cream

2 Tablespoons Sriracha (or to taste)

Honey Mustard Dipping Sauce

1/4 cup Low-Fat Mayo

1/4 cup Dijon Mustard

2 Tablespoons Honey

When I made that Blood Orange Salad a couple weeks ago, I was blown away that blood oranges could be bought pretty much anywhere this time of the year… and since that moment I’ve been eating them as much as possible – and drinking them is no exception!

Here is a fun seasonal cocktail that I’m sure you’ll enjoy!

Red Rover

  • 2 oz bourbon
  • 1 1/2 oz blood orange juice
  • 1/2 lemon juice
  • 1 oz. simple syrup
  • 4 oz ginger ale
  • Garnish with fresh ginger

1. Add bourbon, juices and syrup into a cocktail shaker – shake gently with ice

2. Add ginger ale and stir to combine

3. Pour into a ice filled glass and garnish with fresh ginger

4. Enjoy!

Orange You Excited to Try This?

I am a HUGE fan of seasonal produce and when I saw this amazing recipe by Small Kitchen Chronicles for a Blood Orange Salad I knew I had to try it.

All it takes is:

– 2 Blood Oranges (peeled, pith and ends removed, sliced)

– 1 Navel Orange (peeled, pith and ends removed, sliced)

– 2 Tablespoons chopped Red Onion

– 1 Oz crumbled Goat Cheese

– 2 Tablespoons roughly chopped Raw Pistachios

– 12 julienned Mint Leaves

Arrange everything in a pretty way and top with a dressing of 2 tablespoons red wine vinegar, 2 teaspoons of extra-virgin olive oil and salt/pepper.

Healthy Holiday Eats

With the holidays in full swing I’ve been trying to eat healthy when I’m not at events (I’m so glad no one can see the half eaten peppermint brownies on my desk as I type away…).  That being said I’ve been starting my day off with half a Meyer lemon (from my tree!) squeezed into hot water.  It’s supposed to jump start your metabolism and is surprisingly tasty. 

I like to eat throughout the day so I’ve been making Greek Yogurt parfaits with homemade granola and blueberries (can’t forget the drizzle of honey!).  A great lunch idea is something my sister got me turning onto… Trader Joe’s sells low carb tortillas and I put a little hummus, mixed greens, and roasted chicken or turkey breast, a couple veggies (cucumbers, tomatoes, etc.) and you’re good to go!

For dinner at home this week I was pleasantly surprised with some of this low-cal finds.  Check them out!

Balsamic Chicken with Roasted Tomatoes, Mozzarella and Asparagus


Pork Chops with a Mustard Maple Sauce : I served with Couscous and green beans…  it’s a tad on the vinegary side but if you’re into that (like me!) it’s a hit… and at 254 calories a serving… you’ll get over it! 🙂
