Ginger Bourbon Fizz

After going to Hard Water (an American Whiskey Bar) this past weekend, I’ve been inspired to whip up some bourbon based drinks.  With the 80 degree temps it was important to find a drink that was also refreshing, introduce the – Ginger Bourbon Fizz.

  • 2 oz Bourbon 
  • 1 splash (about a Tablespoon) of ginger simple syrup
  • Juice of 1/2 a lemon
  • 1/2 cup of Club Soda

Ginger Bourbon Fizz Ingredients

Fill a glass with ice and add bourbon, syrup and lemon juice.  Stir and top with club soda. Enjoy!

Rosewater Rickey

Gin Rose Lime Cucumber CocktailI recently bought some rosewater and have been trying to figure out creative ways to use it – enter… the Rosewater Rickey.

Gin Drink

Rosewater Rickey

  • 3 oz Hendricks Gin
  • 1/2 oz lime juice
  • Splash of simple syrup
  • Splash of rosewater
  • Club Soda

Shake gin, lime juice, simple syrup and rosewater in an ice filled shaker.  Strain into an ice filled glass and top with club soda. Stir and enjoy!

Rose Gin Cocktail

* I garnished these drinks with mint ice cubes.  To make them I filled large square ice cube molds 1/3 of the way and freeze.  Place a mint leaf on top and fill tray to 2/3 full.  Freeze again and then fill to the top (this will keep the mint leaf fulling submerged).

Spring Roll Party

I had my girlfriends over for dinner last week, and wanted a fun, interactive (key word: I didn’t want to have to do that much work) type of a meal.  My answer? Spring Rolls!

Shrimp VegetablesI simply prepped the veggies before work, made a couple dipping sauces and boiled the shrimp once they arrived… a simple tutorial on how to roll them and we were all set!

Mint Jalapeno Shrimp Spring Rolls

Spring Roll Veggies For veggies I did:

  • Carrot (use a veggie peeler for the ribbon effect)
  • Mango
  • Cucumber
  • Jalapeno
  • Red Leaf Lettuce
  • Mint/Basil

Shaved Carrots

Other additions/ideas:

  • Vermicelli (rice noodles)
  • Shrimp
  • Tofu
  • Marinated pork/steak

Rolling a Spring Roll

Soak spring roll wrappers in warm water for 30 seconds or so and then add your favorite toppings and roll burrito-style.

I also served a super yummy Thai Chicken Salad that I HIGHLY recommend… I used light coconut milk in the recipe and it was delicious!

We paired everything with a yummy Sauvignon Blanc… and we were all set for a wonderful meal together!

Mediterranean Meal

I was looking for a “healthy” summer dinner that I could put together in under an hour… 4 courses later and with MANY minutes to spare, dinner was on the table!

Menu:

Halomui Salad

The salad is easy to whip up… I did the following:

  1. Cubed half a watermelon.
  2. Tear about 15 leaves of mint onto watermelon.
  3. Top with 3 slices of grilled halloumi cheese (you want grill marks and will get some yummy, melty cheese)
  4. Squeeze juice of one lemon onto salad.

Giant BeansThe beans are from Trader Joe’s and great warmed up straight out of the jar… I mean I spent hours slaving on them… oh wait…

Watermelon SaladWe also sliced and grilled zucchini on kebabs on the grill while the cheese cooked… a super delicious, light and tasty meal!

Peach Ginger Vodka Cocktail

Peach Ginger VodkaThe farmers market had some gorgeous peaches so I grabbed some of my ginger infused syrup, some peaches, some seltzer and got to work!

Peach Cocktail

Peach Ginger Vodka Cocktail: 

  1. Muddle 1/2 a peach in the bottom of your glass.
  2. Add 2 Tablespoons Ginger Simple Syrup.
  3. Muddle 3 mint leaves into mixture.
  4. Add 1 oz vodka (you could also do a light rum).
  5. Fill glass with ice and then top with seltzer.
  6. Stir and enjoy!

Peach Vodka

Ginger Infused Syrup: 

  1. Heat 1 cup sugar and 1 cup water on the stove until sugar has dissolved.
  2.  Turn off heat and add 1 ginger root (peeled and sliced) into the simple syrup mixture and let steep for about 30 minutes.
