Mission Accomplished

My husband and I made the mistake of going to Costco together.  At the checkout line we ran into a family friend, who after greeting us was astonished to learn that the cart behind the counter belonged to us. 12 bananas, 30 pretzel rolls, an extra large carton of blueberries, 30 sausage links… how could two people consume all that!?  Well truth be told we usually can’t.  But to make up for our impulsive spending habits, I am dedicated to using the months supply of eggs (and 40 other family sized items we purchased). 

I looked to see what we had and searched for some recipes using some of the excessive Costco goodies… what did I come up with?  A Spinach, Feta and Tomato Quiche. And on New Years morning, I was proud not only to make a recipe I hadn’t planned in advance, but that I was able to make something pretty darn good with ingredients I already had in the house!

It’s great for breakfast, great for lunch and even great for dinner…I paired mine with a gorgeous red butter leaf salad with a Maple Mustard Vinaigrette that I’m addicted to.  

*Tips: I added more tomatoes than the recipe called for – I’m not even a tomato fan, but roasting them brings a sweetness that can help convert any tomato haters.  Also, I recommend baking the crust for 10 minutes before adding in the ingredients!
