What do you get when you combine a popsicle and a cocktail? A poptail!

When Pintrest first became the “hot thing” there was this image of a Corona Popsicle that kept popping up… eventually I just had to make it for myself… and was pretty bummed that they didn’t taste as great as they looked (what did I expect… I don’t even like beer that much to begin with!). So… when I came across this amazing line-up of “adult popsicles” I was pretty excited to give another recipe a try!

Strawberry Grapefruit Greyhound Poptail

From Bakers Royale

  • 8 oz Grapefruit Juice
  • 12-14 Strawberries
  • 5 oz Vodka
  1. Puree grapefruit juice and strawberries in a blender. 
  2. Once combined, add vodka and puree for 20 more seconds.
  3. Pour mixture into popsicle molds and let freeze overnight.
  4. Enjoy quickly because these puppies melt… FAST!

Pepper Peach Martini

Peach Martini

  • 3-4 Parts Grey Goose (how crazy are you feeling!?)
  • 1 Part Peach Balsamic Vinegar
  • 3 Basil Leaves
  • Fresh Cracked Pepper

Combine vodka, vinegar and ripped basil leaves into a shaker with ice.

Serve up in a martini glass and finish with freshly cracked pepper. Divine…seriously.

Cucumber Mint Vodka Cocktail

I wanted to make a light cocktail to go with next Monday’s Vietnamese dinner menu… and what gets more refreshing than cucumber and mint?!

Cucumber Vodka Mint Cocktail

Cucumber Mint Vodka Cocktail 

Serves: 2

    • 2 mini Cucumbers
    • 2-3 Limes
    • 1 cup of Mint Leaves
    • 4 ounces of Vodka
    • 2 teaspoons Simple Syrup or Sugar
    • Sprite/Seltzer Water
  1. Slice the cucumbers in half lengthwise and scoop out the seeds.  Roughly slice the cucumber into pieces and place into a cocktail shaker.  Muddle cucumbers to release the juice.
  2. Add mint, syrup/sugar and lime juice and muddle with cucumbers.
  3. Add ice and shake.
  4. Add vodka and continue to shake.
  5. Strain into cocktail glass filled with ice.
  6. Top with Sprite (if you like sweeter) or Seltzer Water (more refreshing/tart).
  7. Garnish with mint, lime slice and/or lemongrass stalk.
