Neiman’s Treats

So I’m sure you’ve all Pinned or at least seen pins of the famous $250 Neiman Marcus cookie.. you know this one? Or this one?

Neiman Marcus Cookie

Well I finally decided to give it a try, and test it out for myself!

Chocolate Chip Cookie

The recipe makes 112 cookies, and considering I shouldn’t have been eating them in the first place, I decided to cut the recipe in half.  Here is what I did:

Neiman Marcus Cookies

1 cup butter
2 cups flour
1 teaspoon baking soda
1 cups sugar
2 1/2 cups blended oatmeal (measure oatmeal and blend in a blender to a fine powder)
12 ounces chocolate chips
1 cup brown sugar
1/2 teaspoon salt
1/2 -8 ounce Hershey Bar (I only had a 1/5 oz. bar, so added more chocolate chips)
2 eggs
1 teaspoon baking powder
1 teaspoon vanilla
1 1/2 cups chopped nuts (your choice, I like pecans and walnuts)

Directions:

  1. Cream the butter and both sugars
  2. Add eggs and vanilla
  3. Mix together with flour, oatmeal, salt, baking powder, and baking soda
  4. Add chocolate chips, Hershey bar and nuts
  5. Use an ice cream scoop to ball dough onto cooking sheet (place two inches apart on a cookie sheet)
  6. Bake for 10 minutes at 375 degrees.

Consensus? It was a little more involved than a standard chocolate chip cookie and the end result wasn’t really worth it to me.  I may be a chocolate chip cookie purist, but the blended oats and grated chocolate bar didn’t really bring anything extra spectacular to the table for me.  If you love a soft cookie with some texture, this is for you… but if you are more into chewy/crispy cookies, these aren’t the ones for you.

Homemade Snicker Bars

My mom’s most famous recipe is her homemade snicker bars.  I haven’t bought a Snicker bar… well pretty much ever. And here is the reason why…

Josee’s Famous Snicker Bars

  • 2 cups chocolate chips, divided use
  • 3/4 cup peanut butter, divided use
  • 1/2 cup butterscotch chips, divided use
  • 1 cup sugar
  • 1/4 cup milk
  • 1/4 cup butter
  • 1-7 oz jar marshmallow creme
  • 2 teaspoon vanilla
  • 1 1/4 cup salted peanuts
  • 1-14 oz package caramel squares
  • 1/4 cup evaporated milk

Directions:

  1. First Layer: Melt 1 cup of chocolate chips, 1/4 cup peanut butter, and 1/4 cup butterscotch chips in a saucepan over low heat. Spread mixture in 9×13″ pan. 
  2. Second Layer: Boil sugar, milk and butter in a saucepan for 5 minutes.  Add 1/4 cup peanut butter, marshmallow creme and vanilla.  Mix in salted peanuts. Spread over 1st layer.
  3. Third Layer: Melt caramels and evaporated milk together. Spread over second layer.
  4. Fourth Layer: Melt 1 cup chocolate chips, 1/4 cup of peanut butter, and 1/4 cup of butterscotch chips in saucepan and spread over third layer.
  5. Chill for 40 minutes then cut into squares (don’t let it get too hard, because it will crack when you try to cut squares).

Notes:

  • Put the pan in the fridge while making the next layer…  It helps to spread the next layer more easily. 
  • BUT don’t let the pan of candy sit out for long periods of time before returning it to the fridge… it will make it  sweat and turn your chocolate to a powdery spotted finish.

Valentine’s Treats

It’s a bit of a bummer that Valentine’s day no longer includes a school day filled with exchanging special notes and cards, but that doesn’t mean you can’t bring treats to share with your co-workers!

I decorated some paper snack bags with G-rated love notes and added some homemade Rice Krispie treats (drizzled in chocolate) that I made in heart shaped pans.
