Coconut Carrot Soup

Shutterbean is one of my favorite food blogs, and when Tracy posted a write up on “Meal Prep” a couple of weeks ago, I was transfixed.   Honestly, read it if you haven’t.  IMG_6318 I love planning meals ahead of time, but realized that sometimes that doesn’t work for my life.  On weeks where my husband is going to be working late, or the weather is really nice and I don’t want to spend it in the kitchen, following Tracy’s game plan is a no-brainer.  IMG_6325 I have had her Coconut Carrot Soup pinned for FOREVER, so when she mentioned making a batch on Sunday to have for lunch throughout the week, it re-sparked my interest.  I had just received a bunch of gorgeous carrots from my Farm Fresh to You box, and actually had ALL of the ingredients in my house (that NEVER happens).  IMG_6330 So, the next day before work, I chopped the carrots/onions and put them in a Ziplock bag, and laid out the (non refrigerated) ingredients for later that night. Once I got home from work, I followed the very short directions… and voila! Dinner and a few lunches were prepared with (hands on time) of 10 minutes!  AWESOME!!!

Coconut Carrot Soup

  • 4 tablespoons unsalted butter
  • 1 lb. carrots, peeled & chopped
  • 1 medium yellow onion, chopped
  • 2 cups low-sodium chicken broth
  • 1  14 oz. can unsweetened coconut milk
  • 1 tablespoon sambal oelek (I used sriracha as a back-up)
  • 1 lime
  1. Melt butter in a large saucepan over medium-high heat. Add carrots and onion, season with salt & pepper, and cook, stirring often, until carrots are softened, 15-20 minutes.
  2. Stir in broth, coconut milk, and sriracha.
  3. Bring to a boil, reduce heat, and simmer, stirring occasionally, until vegetables are very tender and liquid is slightly reduced, 40-45 minutes.
  4. Let soup cool slightly, then puree with an immersion blender until smooth.
  5. Reheat in the saucepan if needed.
  6. Add the juice of one freshly squeezed lime and stir.
  7. Divide soup among bowls, and drizzle with sriracha and top with cilantro.

Lemon Miso Hummus

Lemon Hummus I love finding out that things I buy on a regular basis can be EASILY made at home for a fraction of the cost (and healthier too!).  My recipe of the day? Lemon Miso Hummus.  With a handful of ingredients and a food processor or blender, you can whip up a tasty snack in no time!

Garlic

Lemon Miso Hummus

  • 1 – 14.5 oz can garbanzo beans, rinsed
  • juice of one large lemon
  • 1 Tablespoon Tahini
  • 1 Tablespoon White Miso
  • 1 clove garlic, minced
  • 1/2 tsp ginger, minced (or grated)

Combine all ingredients in a food processor or blender until smooth.  Enjoy with flat bread or veggies!

*see I told you it was simple!

Kale Chips

Lately I have been picking up kale at the farmers market (3 bunches for $5!), but considering my hubby isn’t on the kale train yet, I’ve had to get creative as to what to do with it all.  Most of it goes to this salad, but one of my favorite things to whip up with any extra leaves is this – kale chips!

Kale Chips

It’s super easy and super healthy… Here is what you need:

  • Lacinato Kale (I used 1 bunch)
  • 2 teaspoons olive oil (or flavored olive oil)
  • Salt (I used Maldeon)
  • Apple Cider Vinegar*

1. Preheat oven to 300 degrees.
2. Wash kale leaves and dry.
3. Tear leaves from stem and rip into “chip”size pieces (they will shrink once baked) 4. Toss with oil (or oil and vinegar if you are going for a “salt and vinegar” approach) until fully coated (but not soggy).
5. Bake for 15-20 until crispy and slightly golden around the edges.
6. Sprinkle with salt (and/or top with shredded Parmesan).
7. Snack away!  There are so many combination possibilities… Get creative (but at the end of the day good ol’ olive oil and salt tastes great)!

Salt and Vinegar Chips

One of my guilty pleasures? Salt and vinegar chips!

Salt & Vinegar Chips

I have been into baking my own chips for sometime, but wanted to take things to the next level and figure out how to make flavored baked chips… here is what I did:

1. Used a mandolin to thinly slice 3 russet potatoes (thinness is to your liking, I prefer on the thinner side).

2. Immediately submerge potato slices in ice water, while you continue to slice the rest of the potatoes.

3. Drain potatoes and transfer to a large pot.  Fill pot with white vinegar, until potatoes are completely covered.

4. Bring potato slices to a boil over medium high heat, let boil for 5 minutes.

5. Remove from heat and cover.  Let sit for at least 30 minutes to let the vinegar flavor marinate.

6. Gently remove potatoes from vinegar and dry on paper towels.

7. Transfer to a baking sheet (coated with cooking spray) and spray top side of potato slices with oil or cooking spray as well.  Sprinkle with kosher salt.

8. Cook for 10-15 minutes until golden brown.

Bruschetta Dip

Tomato Garlic BasilI had to prep a gluten free appetizer and got overwhelmed by the fact that pretty much every hors d’oeuvre I love is based on carbs/bread/gluten.  My solution bruschetta dip!  Or as I also call it… Italian salsa!

Bruchetta with Chips

  • 2-3 cups heirloom tomatoes/Sweet 100’s (the key is GREAT produce… I picked everything up from the farmers market that day)
  • 3 cloves garlic (or more if you really love garlic)
  • a large handful of basil
  • 1/4 cup olive oil
  • kosher salt
  • freshly ground black pepper
  1. Slice tomatoes into bite-size pieces (I quartered them), cut basil into thin strips (I rolled  5 leaves at a time and used herb shears to cut thin strips), and mince garlic.  Combine everything in a large bowl. 
  2. Drizzle olive oil and sprinkle with salt and pepper to taste.
  3. Let sit at room temperature for at least an hour to let the flavors really meld together.
  4. Serve with gluten free crackers (if going the gluten free approach)… otherwise serve with buttered and toasted baguette bread slices!
