Harvest Soup

I love to take advantage of soup making on rainy days, and while this and this soup were my go to last winter, this Harvest Soup is going to be my new staple.  The hint of apple really adds an unexpected twist and the coconut milk leaves you with the richest, ceramist soup… delicious!

Fall Harvest Soup 

via Blissful Basil 

  • 1 tablespoon coconut oil
  • 1 yellow onion, diced
  • 1 medium butternut squash, peeled and cubed
  • 1 medium sweet potato, peeled and cubed
  • 1 green apple, peeled and cubed
  • 3 cups low sodium vegetable broth
  • 1 teaspoon cinnamon
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon ground ginger
  • pinch nutmeg
  • 1/2 cup light coconut milk
  • 1 teaspoon sea salt
  1. Heat coconut oil in a large stock pot over medium low heat. Sauté onion in pot until translucent (5-7 minutes).
  2. Add butternut squash, sweet potato, apple, vegetable broth, spices and stir gently until combined.
  3. Turn up the heat to medium-high heat, cover and cook for 25 minutes or until veggies are tender.
  4. Remove from heat and use an immersion blender to puree.
  5. After a minute or so of pureeing, slowly drizzle in coconut milk and sea salt and puree until smooth.
  6. Swerve warm and garnish with pumpkin seeds, pomegranate seeds, sliced green onions, and/or radish sprouts

Now that California is finally enjoying some rain, I can’t help but embrace this wonderfully cozy weather!  Today I wanted to share my favorite go-to cozy items (and hopefully learn some of yours too)!

Eberjey PJs

As I have said on numerous occasions, Eberjey PJs are one of my guilty indulgences.  The material is so soft but has a little stretch and is really just the best thing to stay in all day night long.

Faux Fur Throw

Despite having a house under 1,000 square feet, I feel it extremely necessary to have 4 (and counting) faux fur throws.  The texture, the warmth, the luxury… are the perfect combination, and I truly feel you can’t have coziness without one of these bad boys.

Cashmere… anything

Enough said. Cozy = Cashmere.

Tea

Breakfast in Bed

When I think of the word cozy, I imagine myself in a big luxurious bed enjoying a delicious breakfast on a rainy morning, watching The Holiday or reading the new Martha Stewart magazine (did that sound so basic of me!?) – but anyone who has indulged in breakfast in bed knows it sounds better than it usually is. Maple syrup spilling onto your white duvet? Scrambled eggs dribbling onto your pillow case? No thanks. Therefore I would like to just include the bed portion in my cozy must-haves, and we all know how important bedding is to that equation!  While I personally haven’t tried their product yet, I read about Parachute recently and was drawn to their great philosophy.  Worth checking out if you are in the bedding market!

Scented Candle

Much to my husband’s dismay I always have a candle burning.  It doesn’t matter if its 7am in the morning and I’m getting ready for work, or I’m deep cleaning the house – I love the added warmth and smell it brings to my home.  While I have many favorites, I’ll always have a special place in my heart for Jo Malone candles (and perfumes, and lip balm, and lotions, and…).

Grilled Cheese Sandwich with Blue Chair Fruit

J and I were perusing the farmer’s market the other day when a quaint little stand caught my eye.  Blue Chair Fruit is an artisan jam/jelly/butter vendor based out of Oakland that I’ve seen before, but for whatever reason have never given a try… boy do I regret that.  One taste later and I was sold – we left with the Black Mission Fig and Pasilla Chile jam, as well as the Spiced Tomato Bourbon Conserve.  A few days in and the fig jam was basically gone (when paired with brie and rustic crackers, all my self control was lost), so I knew I needed to figure out something to whip up with the Tomato Jam… here is what I came up with:

Grilled Cheese Sandwich with Spiced Tomato Bourbon Conserve 

  • Sliced Sourdough bread (I highly recommend going to the Whole Foods bakery and having them slice a loaf for you in-house – IT’S SO GOOD)
  • Sharp white cheddar cheese, grated
  • Spiced Tomato Bourbon Jam
  • Butter
  • Optional: Ham
  1. Lightly butter both sides of sourdough bread (two slices needed per sandwich – obviously.)
  2. Head a non-stick pan of medium high heat and heat bread until face down side is golden brown.
  3. Flip bread over and top with grated cheese. You wan to sear over medium high heat until slightly golden brown and then turn heat to low to melt the cheese.
  4. Remove from heat and top one side of bread with a tablespoon or two of the tomato jam.
  5. Add sliced ham (optional) and top with other side of bread.
  6. Enjoy!

G&T with Finger Lime

My CSA box just introduced me to the seriously intriguing “finger lime.” These little beauties are also appropriately named “caviar limes” because of the little beads they produce.  They can be used as a fun garnish on anything  you’d use lime juice in, and I love using them as a fun addition in cocktails (naturally).

While a gin and tonic is not a revolutionary cocktail, when made with the following ingredients, it… well…. is.  So next time you want to be a G&T purist be sure to stock your bar cart with the following:

Gin & Tonic with Finger Lime

  • 3 oz Bloom Gin
  • 4 oz Fever Tree Tonic Water
  • Pearls from 1 Finger Lime (no idea of that’s the terminology… you get the point!)
  1. Fill a glass with ice and top with finger lime pearls, gin and tonic water.
  2. Gently stir and enjoy!

** I was reading that making tonic water ice cubes is a great addition to perfecting this drink (definitely giving that a try this season!

***Also, adding a squeeze of lime juice in lieu of finger lime is just as tasty!

***During the summer season we love to use grapefruit wedges and edible flowers to spruce up our G&T’s (an idea we swooped from Coqueta). During the winter months when the citrus is harder to come by, I went with a Pomelo instead.
