Mom's Famous Mashed Potatoes

My mom makes the BEST mashed potatoes of all time.  So much so, that I don’t eat them anywhere else. Even if they come with my entree at a restaurant, I will take a bite and be bummed that they don’t even compare (think I’m being dramatic? Try them… then we’ll talk :).

Anyway with the holiday season up on us, and with cold weather in FULL swing, I wanted to share some of my mom’s tips on how to create the perfect comfort food – Mashed Potatoes.

Tip 1. Russet potatoes are best for light, fluffy, whipped potatoes. Yukon Gold tend to disenegrate more easily and need to be watched.

Tip 2.  Peel potatoes and cut into 1 inch cubes.  You want all cubes to be uniform in size as to insure even cooking throughout.

Tip 3. After cutting each potato into cubes, make sure to immediately transfer to a pot filled with cold water (DO NOT cut all potatoes THEN put them in water).

Tip 4. Make sure to salt your pot of water (also remember to check your potatoes before salting them at the end of the recipe – more likely than not, they will not need much salting).

Tip 5. Potatoes will be ready to remove for water once you can fully pierce them with a fork.

Tip 6. Never let potatoes cool after draining.  Instantly remove them from water, drain them in a colinder and transfer to a mixing bowl (they will get a bluish hue otherwise).

Tip 7. You can transfer completed potatoes to a cast iron 13×9 pan, cover in foil and keep warm over low heat until read to serve (you also can heat them in a crock-pot on the warm setting).

Tip 8. Her standard recipe is found here, but feel free to make substitutions to your liking – namely roasted garlic for garlic mashed potatoes or wasabi powder for wasabi mashed potatoes (GREAT with an asian influenced marinated fish or tofu).

Winter Lights

So much about fashion right now is the winter white movement… It looks super crisp, clean and refreshing but in a cozy, comfortable way.  Unfortunately the white jean look is not a flattering one for yours truly, so I prefer a winter “light approach”…

I I also am loving J.Crew’s denim department lately, and recently caved and bought my first pair of distressed jeans (my dad’s voice in my head throughout the transaction – “why would you pay for ripped pants?!”).

Quinoa & Sausage Stuffed Acorn Squash

Quinoa Sausage Squash

Most Sunday’s result in me being over the whole “cooking thing,” despite the fact I love a great Sunday dinner.  But this past weekend I sucked it up and got to the kitchen and tried a recipe that has been on my mind for awhile.  The best part(s)?  It was quick, beautiful AND delicious.  And guess what – even J ate it (he usually see’s quinoa and runs).

It also was the perfect recipe to take for leftovers the next day!

Filled Acorn Squash

Quinoa & Sausage Stuffed Acorn Squash

Adapted from Bite by Michelle

  • 2 acorn squash, halved & seeded
  • 3/4 cup quinoa, cooked according to box’s directions (I used tricolor)
  • 4 links hot Italian turkey sausage, meat removed from links
  • 1/2 yellow onion, diced
  • 1 red bell pepper, diced
  • 1/4 cup pecans, chopped
  • 1 clove garlic, minced
  • 10 fresh sage leaves, chopped
  • 1 Granny Apple, unpeeled & seeded & chopped
  • 1/4 cup dried Bing cherries
  • Freshly grated Parmesan
  • Olive Oil
  • Salt/Pepper
  1. Line baking sheet with a Silpat or parchment and drizzle with olive oil.
  2. Place squash halves cut side down (I rubbed them around in the olive oil to make sure they were coated well) and roast for 25 minutes until tender.
  3. Heat a skillet over medium high heat (this is the first time I used my cast iron pan… eeeekkk!!) and add a couple tablespoons of olive oil.
  4. Once warm, add onion, bell pepper, garlic, sage and pecans. Saute for 10 minutes.
  5. Add sausage and break up with a spoon (I kept the veggies on one side of the pan and uncooked meat on the other). Once the pinkness is gone, stir the mixture together and remove from heat.
  6. Fold in cooked quinoa, apples and cherries and fill cooked squash halves with mixture.  Top with freshly grated Parmesan and be prepared to have your taste buds become EXTRA happy!

*My tip is to chop everything finely and evenly.  It makes it look beautiful and makes the flavors really develop when you truly are getting a taste of each ingredient in every bite!

Spiked Maple Cider

Maple Spiced Cider

I love the challenge of figuring out “winter” themed cocktails for this holiday season… and this yummy drink is the perfect concoction to add to my repertoire (and I recommend you add it to yours too!).

Sliced Lime Spiced Cider

Spiked Maple Cider

  • 2 oz spiced rum
  • 1/2 oz maple syrup (the REAL stuff)
  • juice of 1/2 a lime
  • 4 oz apple cider
  • dash of cinnamon
  1. Rim glass in lime juice and dip in sugar (I used Maple Sugar from TJ’s!)
  2. Shake rum, maple syrup, lime juice, cider and cinnamon in a shaker with ice.
  3. Strain into cocktail glass and enjoy!

Retro Curls

I pretty much have 3 hair styles in my rotation – straight, Victoria Secret curls, and a ballet bun.  It is pretty rare for me to mix it up, but sometimes you need to “fun it up” and with the holiday season in full swing, a new-do is a simple and easy way to shake things up.   This retro curls tutorial is a surprisingly quick way to glam up your holiday look (I have done this for a black tie that I had 30 minutes to get ready for  – after work!! and had time to spare!!) and it also looks amazing in a pony the next day…

Step 1. Start with blow dried hair (I recommend washing your hair in the morning and letting it get dirty for the day and then curling it in the evening for best results). Spray with a curling setting spray.

Step 2. Create a deep part and start curling hair (on side of part with less hair).  I start curling at about eye level.

Step 3. Curl hair TOWARDS your face and hold curl for 5-10 seconds.

Step 4. After releasing the curling iron, coil hair into a tight curl.

Step 5. Pin curl in place with bobby pins (or hair clips if you have them).

Step 6. Continue curling hair on the right side of your head (or which ever side you are curling), repeating steps 2-5.

Step 8. Clip up top portion of hair on right side.  Begin curling hair in same fashion as before (curled TOWARDS face).

Step 9.  Keep curling and pinning hair.

Step 10. Let down top portion of hair and tease the crown (if you would like some lift).  Brush it out and continue curling following steps 2-5.

Step 11. Let hair sit in curls for about 15 minutes – a great time to do your make up!  Remove bobby pins.

Step 12. Finger brush your hair out (don’t worry about any dents yet!).

Step 13. Twist curls together in one face-ward motion.

Step 14.  Gently run a curling iron over any dents to remove creases.

Step 15. Use your fingers to brush out the right side of your hair and smooth curls.

Step 16. Spritz with some finishing spray and catch up your Mad Men reruns 🙂
