Halloween Menu

Last night was Jeremy and my first Halloween in our new home together… and we had no idea what we were getting ourselves into.  We naively invited one of our favorite couples over – Erin and Craig to hang out and help us pass out candy… unfortunately we had no idea just how much help we were going to need.  Let’s just say – 3 hours of trying to cook, 500+ trick or treaters and 12 bags of candy, i was finally able to feed our wonderfully patient guests.

Opening the door for 4 year old princesses and superheros every 2 minutes is not conducive to creating a 3 course meal, but at least i can say i tried. here was my menu:

Starters:

Cambozola Cheese stuffed Dates

Cream Cheese Spread with Red Pepper Jelly and Crackers

Salad:

Glazed Balsamic Fig and Red Butter Leaf Lettuce (too bad in the chaos i forgot to serve it)

Sides:

Green Bean and Radish Salad with Dijon Vinaigrette  

Pumpkin Risotto with Prosciutto

Entree:

Pork Chops with a Dijon Butter Sauce

Dessert:

Graveyard Dirt Cups (kicking it old school)

Weekly Menu #2

With everything going on my blog that was supposed to be “recipe/organization/DIY” centered has somehow developed into a picture version of my planner.

In a lame attempt to bring it back to it’s (nonexistent) roots, I wanted to post some of my favorite recipes lately.

Considering I work a 50 hour work week and my husband works closer to a 90 hour work week, food is not something we have a lot of time to wait around for.  In my attempts to not have us eating out 6 times a week, I have devised a little plan.

On Saturday mornings I sit down with my pumpkin spice tea and sort through my Pintrest boards and recipe binders to create a great menu for the week.  Something always comes up (business meetings, dinner at mom and dad’s house, etc.) so I have learned that creating 3 weeknight dinners is ideal.  I try to have the ingredients be similar so my shopping list isn’t super offense… but who are we kidding… that rarely works out.

Some surprisingly easy meals that can be whipped up after work are listed below:

Weekly Menu #1

My latest addiction = shredded chicken.

It is SO easy to prepare and there are hundreds of tasty recipes to use it in!

Sunday night put boneless, skinless chicken breasts in a crockpot and cover with chicken broth).  I turn it on high for 4-6 hours or you could could cook on a high for 2-3 hours then cook on low while you get your beauty sleep 🙂

After the chicken is cooked through simply grab two forks and start shredding… or if you are me, give it to your husband to prepare!
