Breakfast Tacos

You know when you discover something and can’t wrap your mind around how you ever lived without it?!  For me, that thing is breakfast tacos.

I’ve mastered all things Mexican food and have fully embraced them in my morning routine – breakfast burritos, Huevos Rancheros, Jalisco Scrambles … and now I am excited to share my newest breakfast kick – breakfast tacos.

So simple, so delicious and SO EASY.  All you really need is tortillas and you can get as creative as you wish… here is what we whipped up for brunch this weekend:

Breakfast Tacos

  • tortillas
  • eggs
  • bacon (could use ham or sausage)
  • shredded cheddar cheese (could use cotija as well)
  • avocado
  • tomatoes, diced (or pico de gallo)
  • black beans (or pinto)
  • cilantro
  • other:
    • potatoes
    • onion, diced
  1. Pan fry bacon in a skillet (I used my cast iron pan) on medium low heat for about 4 minutes per side (keep an eye on them).
  2. Let bacon cool on paper towels and reserve bacon fat.  Cut or crumble into bite sized pieces.
  3. Whisk eggs in a dish (for 2 people I used 6 eggs) and add salt/pepper.
  4. Scramble eggs over low heat in 1 tablespoon of bacon fat and stir in beans to warm up last 2 minutes or so.
  5. Heat up tortillas in microwave for 30 seconds (wrap in wet paper towel).
  6. Top with assorted toppings (cheese, eggs/beans, bacon,  avocado, tomatoes, cilantro) and drizzle with hot sauce of your choice (I’m addicted to the green Tabasco).

*If you like potatoes and onion I highly recommend baking or sautéing them with the bacon fat as well.

**I think my favorite thing from Whole Foods is their breakfast meat. Their in-house maple sausage and applewood bacon are AMAZING (and totally worth the splurge).

I LOVE Mexican food.

If I had to eat one genre of food (without having to worry about my waistline), Mexican would win by a landslide… enchiladas? Quesadillas? Tacos? Oh goodness…

018 The Feezor family are Huevos Rancheros addicts, but sometimes it just seems like too much work to whip up at home (hence it being a staple on our brunch outings).

Luckily, I found a way to make a relatively quick and very tasty Huevos at home.  The biggest plus for me? Minimal clean up 🙂

Huevos Rancheros

  • Corn Tortillas
  • Monterey Jack cheese
  • Pico de Gallo
  • Salsa Verde (I use the TJ’s version)
  • Eggs
  • Avocado
  • Beans (Black or Pinto – drained, rinsed)
  1. Brush olive oil on the inside of a custard tin (XL muffin tin/pan).
  2. Warm corn tortillas in microwave for 30 seconds or until soft/pliable (wrap them in paper towel first!)
  3. Push them into muffin tin and brush with oil.
  4. Place a spoonful of beans into the bottom. You also could get creative with the step and add finely diced onion, cilantro, etc.
  5. Grate a little cheese over the beans (to your liking).
  6. Crack egg over bean/cheese mixture (make sure it is contained in corn tortilla shell.
  7. Grate more cheese a top the egg (I like the egg pretty much covered).
  8. Bake at 400 degrees for 20 minutes.
  9. Top with pico de gallo, salsa verde, chopped avocado and cilantro!

Nacho Party

We were looking for a fun way to mix up Sunday night dinners… so after a morning at the lake and an afternoon in the pool no one was in the mood to slave in the kitchen… so was born – a Nacho Party!

Nachos

I spread chips on a baking sheet and sprinkled beans and shredded cheese on top.  A baked them in a preheated oven at 375 degrees for about 5 minutes (or until cheese is melted).

Tips: 

  • Chips should be medium thickness – greasy or super thin/thick chips will not make for great nachos.  Tostitos Simply Natural or the Organic Trader Joe’s chips are great options. 
  • Cheese that melts well is critical.  I made three separate baking sheets of chips – 1. Monterey Jack/Pepper Jack Blend, 2. Mild Cheddar, 3. Combination of 1 & 2

Chips

Prepare toppings in separate bowls for your guests to choose their own toppings.

Suggestions: 

  • Meat (I bought pre-marinated Carne Asada and Pollo Asada at TJ’s)
  • Guacamole/Salsa/Sour Cream
  • Cilantro
  • Radishes
  • Avocado
  • Diced Tomatoes
