Breakfast Tostada

Step 1: Chop Swiss Chard – saute stalk separately from the greens with garlic, salt and olive oil

Assemble 1st layer: Swiss Chard

Assemble 2nd layer: Lentils (rinse canned lentils and warm on the stove or microwave) – you also could use black beans

Step 3: Chop sweet potatoes and saute with chopped onion, garlic and olive oil (add herbs if you wish!)

Assemble 5th layer: Top eggs with chopped heirloom tomatoes and basil

089The joy of this meal is you can use whatever you have in your fridge/garden/kitchen – an “everything but the kitchen sink” type of meal if you will… get creative!  This is also a great meal to top with your favorite hot sauces… mine being the green Tabasco 🙂

Healthy Eggs Benedict

Eggs Benedict

I’m always looking for fun spins on my favorite foods (especially the ones I don’t indulge in often), so when I came across this recipe I knew I had to give it a try!

Tips:

  • To poach eggs: 
  1. Heat a couple inches of water in a frying pan with a 2 T of vinegar until bubbles begin to form at the bottom (but don’t boil!)
  2. While the water is heating in your pan, put eggs into a bowl of boiling water for 30 seconds or so.
  3. Then slowly crack the egg into the “bubbled water” as close to the water’s surface/as delicately as possible (as to not “disturb” the egg)
  4. Let them cook for 5-10 minutes until cooked to your liking.
  5. Use a slotted spoon to remove them and transfer to your dish.
  • We love Dijon mustard and added a little bit more to the vinaigrette (closer to a teaspoon) 
  • I recommend tossing the arugula with the vinaigrette (reserve a bit to drizzle atop the eggs after)
  • Toast the English Muffins!
  • We used farm fresh eggs and Proscuitto di Parma sliced fresh from the deli and boy did it make a difference!

Spanglish Sandwich

Ten years ago my family created our famous go-to breakfast sandwich based off the one from the film Spanglish.  It is so simple, but when made with ingredients from my mom’s garden, and organic produce… it is taken to the next level.

Egg Sandwich

Spanglish Breakfast Sandwich

Assemble the following between toasted sourdough toast:

  • Sliced heirloom tomatoes
  • Romaine lettuce
  • Sliced onion
  • Maple bacon
  • Sliced avocado
  • Fried egg
  • White cheddar cheese

004I recommend cooking the bacon, then frying the egg in the rendered bacon fat… shred the white cheddar on the hot egg and voila!  You also can put a little mayo on your toast, but I think it’s just as yummy without it!  Good morning!!!

Morning Sunshine!

I always ate breakfast growing up but once I “went corporate” I found it a lot harder to make time for the most important meal of the day…

The solution – smoothies! My sister went on a kick for awhile and made these AMAZING concoctions every morning, but due to my lack of creativity and time I have created a new staple.  

4 ingredients + 1 blender + 20 seconds = filling/tasty start to your day!

So go grab – 1 banana, 2 handfuls of spinach or kale, 1 spoonful of almond butter and about a 1/4 cup of almond or coconut milk…

Mix everything in a blender then add some ice, blend some more and voila!

PS. If you aren’t a greens kinda person, don’t let it fool you – it tastes like a peanut butter smoothie!

Tip: When you’re done rinse your blender immediately add some water a pump of dish-washing soap and put the lid back on to blend for 30 seconds more.  It instantly cleans your blender!
