- 2 lbs ground turkey
- 1 medium onion, finely chopped
- 1 cup parsley, finely chopped
- 2 tablespoons olive oil
- 2 teaspoons cumin seeds, toasted & ground (I cheated and just used ground cumin)
- 3/4 teaspoon ground cinnamon
- 2 1/4 teaspoons coarse salt
- 1/2 teaspoon freshly ground pepper
- Mix meat, onion, parsley, olive oil, cumin, cinnamon, salt & pepper in a large bowl (be sure to gently incorporate – you don’t want to over mix!).
- Form 1/4 cup of mixture into an oval and place on a rimmed baking sheet.
- Let sit in the refrigerator, covered – for 1 hour and up to 1 day (I did up to this portion before work!).
- Heat grill for direct heat or a grill pan over medium heat.
- Thread each oval onto a skewer (we skipped this step).
- Brush grill grates or grill pan with oil.
- Grill kebabs (turning as needed) until cooked through, about 10-12 minutes.
