Cucumber Mint Vodka Cocktail

April 19, 2013

I wanted to make a light cocktail to go with next Monday’s Vietnamese dinner menu… and what gets more refreshing than cucumber and mint?!

April 12, 2013

I’m always in for a fun cocktail idea, and I’ve been meaning to make this for awhile. It was so yummy and don’t be afraid of the balsamic… it’s worth the risk!

Pineapple Infused Vodka

I. Am. Obsessed. I don’t care what you are doing, stop and make this NOW.

Good luck finding a reason not to make this, because my family made this in a hotel room this past week (well a condo with a kitchen… so it’s not THAT creepy, but you get the point).

Simply slice some fruit (we did pineapple) and cover with vodka (we used Grey Goose, which probably didn’t hurt the taste department).

We let it sit out (not refrigerated) overnight then popped it in the fridge before drinking it the following night.

We just poured it over ice and were blown away by how good it was. You can also muddle pineapple if you want a fun touch!

I can’t wait to try different variations… I’m thinking:

  • Pineapple Jalapeno
  • Meyer Lemon
  • Watermelon
  • Ginger

Anyone else have any suggestions?
