We had a once in a lifetime experience this past weekend at the iHeart Music Festival… The two day festival had some insane highlights… My top 5 would be: 1. Usher (he’s just that amazing) 2. Swedish House Mafia (they really pumped everyone up and put on a great show), 3. Pink (she sang while doing aerial aerobatics and overall just kicked ass), 4. Bon Jovi (I could have cared less about them when reading the line up but they really put on a great show), 5. Lil Wayne (I’ve always wanted to see him live… Check!) Other trip highlights included: eating at Barmasa, reading the epic novel Gone Girl, going to Border Grill with Jeremy’s mom, soft pretzels at the arena, and playing craps. Luckily we have more of a break until our next Vegas trip (hopefully).

We were able to spend the weekend at Pat’s beach house and had an insanely lazy and relaxing time. We took walks, went wine tasting (which turned into tequila tasting), cooked, read and watched a LOT of TV 🙂 Kitchen tip: I pre-made some shredded chicken Thursday night by covering boneless, skinless chicken breasts with chicken broth and cooking it for 6 hours. You can just shred it with 2 forks and refrigerate it until you use it during the week! Here is a great recipe for BBQ Chicken Salad that we had Friday night – http://www.melskitchencafe.com/2011/02/bbq-chicken-salad-with-creamy-bbq-cilantro-lime-dressing.html enjoy!

I think it’s safe to say that Vegas was a success! Between our overly full tummies (Sushi Roku, Mesa, Cut), amazingly refreshing drinks (Strawberry-Balsamic Vinegar Smash, Cactus Pear Margaritas, Pepido’s Revenge), a pool party with the OCD guy from Million Dollar Listing and a dance party of epic proportions with Calvin Harris and Michael Phelps, it was a weekend to remember… See you in two weeks Vegas!

Crock Pot Love

September 5, 2012

It was a relaxing and productive Labor Day weekend at the Beavers… Some highlights: my first Crock Pot dish – a Chipotle Barbacoa copycat recipe (JB’s favorite), picking up some GORGEOUS baby pink roses and cally lilies at the farmers market, having Jeremy’s mom over for a belated birthday dinner, laying poolside and BBQing with all of my college roommates and our boys 🙂 and making those adorable sprinkled chocolate dipped pretzels! 3 day weekends are a real treat!

Sonoma Grand Prix

A day of firsts! We were lucky enough to get invited to the True Car-Virgin America suite at the Sonoma Grand Prix this weekend and my family joined us for a day of learning what racing is all about. We met the drivers, got to see the cars up close and personal and even got to go in the pit during the race! The food and drinks were fabulous and it was really neat to do something new and learn about the “Indy Driving World.” Us and 40,000 people left the race and started the 2 hour drive home on a one way rode so we decided to kill sometime and have another first… Wine tasting in Napa! We sipped champagne at Domaine Chandon and then enjoyed dinner at the Oxbow center (Pinot and pizza!) and made sure to try some oysters (another first) and buy some artisan cheeses to take home. Such a long and wonderful day!!
