Dinner with the Parents

When we were little, my sisters and I would each get a “date” with one of our parents – we would spend the day painting pottery, go bowling, or grab a bite to eat.  It was nice to have one-on-one time and in a family of 5, the undivided attention didn’t hurt either.

As I’ve gotten older, I really have grown to appreciate the time with my parents, so when Jeremy had a business dinner, I thought it the perfect night to have my parents over for dinner.

My mom is gluten-intolerant, so I put together a gluten-free meal that (hopefully) even my dad would like.

*I didn’t have skewers on hand, so I just made thinly sliced pieces 1-2 inches long and cooked them in a pan for 2 minutes on each side.

Cucumber Mint Vodka Cocktail

I wanted to make a light cocktail to go with next Monday’s Vietnamese dinner menu… and what gets more refreshing than cucumber and mint?!

Cucumber Vodka Mint Cocktail

Cucumber Mint Vodka Cocktail 

Serves: 2

    • 2 mini Cucumbers
    • 2-3 Limes
    • 1 cup of Mint Leaves
    • 4 ounces of Vodka
    • 2 teaspoons Simple Syrup or Sugar
    • Sprite/Seltzer Water
  1. Slice the cucumbers in half lengthwise and scoop out the seeds.  Roughly slice the cucumber into pieces and place into a cocktail shaker.  Muddle cucumbers to release the juice.
  2. Add mint, syrup/sugar and lime juice and muddle with cucumbers.
  3. Add ice and shake.
  4. Add vodka and continue to shake.
  5. Strain into cocktail glass filled with ice.
  6. Top with Sprite (if you like sweeter) or Seltzer Water (more refreshing/tart).
  7. Garnish with mint, lime slice and/or lemongrass stalk.

How to Wrap a Gift

For some reason I’ve never gotten on the YouTube bandwagon and  tend to prefer a little step by step picture tutorial.  So here is my contribution to the tutorial world – How to Wrap a Gift:

1. Cut your wrapping paper.  Make sure there is enough to fully wrap your present, but don’t feel the need to use the whole roll…no need to waste!

2. Cover half of the box in gift wrap and tape down to the box.

3. Take the remaining piece of wrapping paper and fold 1/2 inch under to create a clean seam.

4. Fold wrapping paper over the other side of the box and secure with tape.

5. Face unfinished end of the box towards you. Fold top half of the paper down and tape.

6. Fold both corners to the seam of the box and crease.

7. Fold outer flap in half to create another clean edge.

8. Tape to side of box.

9. Repeat Steps 5-8 on the other side of the box and voila! Finish with a bow.
