Halloween Meal

Last year I put together an involved Halloween menu, and while delicious, was not conducive to opening the door every 20 seconds for a new wave of trick-or-treaters (I’m not exaggerating… we had over 500 kids come to our door last year!). Lesson learned.

Trick or Treaters

This year, I am taking a more relaxed approach and serving a meal that has minimal prep time, can be eaten through the night and requires minimal plating/cooking on my part 🙂  Enter – the slow cooker, the answer to entertaining during the cooler seasons.  I love that you can put something in it in the morning and come home to a yummy meal come 5 o’clock!

My favorite slow cooker meal of the moment is this copycat Chipotle Carnitas recipe. While Mexican may not be the first meal that scream Halloween, it is a favorite in our household and what better way to celebrate a holiday than with some of your favorite things?!

Aside from prep the morning of (browning the meat, chopping onions, etc.), I just followed the recipe up to boiling the tomatoes, etc. and poured it over the meat in the crockpot and let it cook on low for 8 hours (then followed the rest of the recipe).

When served with an array of toppings (which also can be prepped the morning of), everyone can find something they like – make your own burritos/tacos/burrito bowl/salad, and you can focus on handing out candy to all of the best dressed kids in the neighborhood!

And when all else fails… order a pizza!

Rose Martini

For Penny’s birthday party (full post here), I created a couple specialty cocktails.  One was a Marin Mule (named after a Moscow Mule – recipe here) and the next was a concoction by yours truly.  Penny has really been into these Rose Watermelon juices from the farmers market, so I wanted to do a spin off of that… here is what I came up with!

Watermelon Juice Vodka Rosewater

Pennytini

2 oz vodka
4 oz watermelon juice
1/2 oz rosewater
1 oz lime juice

Pour ingredients in a shaker filled with ice and give it a few good shakes.  Strain into a martini glass and enjoy!

Fall calls for cuddling up and enjoying the change in weather… here are some of my favorite cozy must haves! Cozy

Hair Ties/Throw Pillows/PJs/Candle/Slippers/Throw Blankets/Pumpkin Tea/Kindle

Hair Ties: For anyone sick of having kinks in their hair after putting it up, these are for you! Minimal damage to your hair and cute when they are on your wrist in between uses!

Throw Pillows: Nothing helps you to cozy up then some comfy throw pillows.  Cost Plus World Market has AMAZING sales (I scored a bunch of pillows last season for $5 each!)

PJs: I scored my first pair of Eberjey PJs on Gilt and I am addicted.  They are so cozy and the old school vibe makes me feel rather chic when bumming around the house!

Slippers:  I received my first pair of Ugg slippers in college and they will be a staple in my closet for years to come.  The perfect slipper to wear around the house on lazy Sunday mornings.

Throw Blankets: I can’t get enough of them.  I currently have 4 faux fur throws and during the cooler months they are in use at all time.  Nothing says luxury like watching Real Housewives in faux mink!

Trader Joe’s Pumpkin Roobios Tea: This drink is my Pumpkin Spice Latte.  I have no less than 3 cups a day and I look forward to fall specifically to have this.  IT’S AMAZING. If you like pumpkin… go to your nearest TJ’s STAT.

Kindle Fire: My hubby recently upgraded my Kindle and I although I initally fought it, I couldn’t be happier.  It is so lightweight, can be read in the dark, and is great for both travel and home.

Guide to Monterey

This past weekend I helped play tour guide to some out of town visitors, so I thought what better place to share my Guide to A Day in Monterey!?

10:30am: Arrive at Sticks at Spanish Bay for an amazing brunch – make sure to sip on their amazing Bloody Mary’s and try their Eggs Benedict or Huevos Rancheros.

11:30am: Head out to the patio afterwards to take some touristy pictures with a breathtaking view.

11:45am: Get in the car, roll down the windows and pull out your camera, because you are going to enjoy the stunning views of 17 Mile Drive.

12:00pm: Arrive at the renowned Pebble Beach Lodge.  Enjoy the panoramic views from the lobby and (weather permitting), enjoy a drink on the patio of The Bench (after taking a cute Instagram picture on the 18th hole). I highly recommend the Thai One On 🙂

1:30pm: After exploring Pebble Beach (the shops, the putting green, the awards on display), get back in your car and head into Monterey.

1:45pm: Park and make your way to Cannery Row.  This legendary spot is a must stop spot for visitors… while most of the stores are pretty touristy now (ie Cannery Row shot glasses), it is nice to walk the street and people watch… plus there are many places to stop and look out at the bay.

2:00pm: Make your way to Taste of Monterey for a wine flight and an afternoon cheese plate. The newly updated venue boasts floor to ceiling windows directly over the water… amazing for seal and kayak watching.

3:00pm: Head over to Monterey Bay Aquarium. It is one of the best in the world, and a 2-3 hours is perfect to pop in and explore (they close at 6pm).  Make sure to visit the sea otters and the jellyfish exhibit!

6:00pm:  A few doors down from the aquarium is one of my favorite spots to eat – the C restaurant, located in my favorite Monterey hotel (The Clement Monterey) – stay there if you are planning a weekend trip!

8:00pm: Save room for dessert and stop by Ghirardelli’s to share their “World Famous Hot Fudge Sundae” or by Rocky Mountain Chocolate Factory for a caramel apple!

8:30pm: Head to the car (or your hotel room) and start planning your next adventure!
