Picnic Party

One of my biggest pet peeves is when the weather report reads that the weather is going to be amazing all week, EXCEPT Saturday and Sunday.  Luckily, this particular weekend was just the opposite.  After some showers and clouds, the skies parted for sunny, 80 degree weather.  And what better way to celebrate than with a picnic?!

We grabbed some of our favorite people and made our way up to our favorite, local winery – Testarossa. We were able to wine taste, sun bathe and picnic… all at the same time!! Does it get any better?

Here was our menu:

I am a HUGE proponent of no dairy/mayo based foods at picnics.  Between the sun and lack of refrigeration, the whole thing freaks me out, so we did a lot of olive oil based items. Even the sandwiches went sans mayo, using pesto instead!  In warm weather the key is having light yet satiating menu items.

Spanglish Sandwich

August 14, 2013

006

Ten years ago my family created our famous go-to breakfast sandwich based off the one from the film Spanglish.  It is so simple, but when made with ingredients from my mom’s garden, and organic produce… it is taken to the next level.

Egg Sandwich

Spanglish Breakfast Sandwich

Assemble the following between toasted sourdough toast:

  • Sliced heirloom tomatoes
  • Romaine lettuce
  • Sliced onion
  • Maple bacon
  • Sliced avocado
  • Fried egg
  • White cheddar cheese

004I recommend cooking the bacon, then frying the egg in the rendered bacon fat… shred the white cheddar on the hot egg and voila!  You also can put a little mayo on your toast, but I think it’s just as yummy without it!  Good morning!!!

Chicken Enchiladas

054

I was cleaning out my pantry and came across some TJ’s enchilada sauce that I hadn’t used yet… so I roughly followed this recipe (substituting enchilada sauce for salsa and putting chicken and cheese inside) and topped with avocado, olives and cilantro.

Banh Mi Sandwich

Bahn Mi Sandwich

I love this blog and I love Banh Mi, so when I saw this variation (I typically make it with meatballs), I had to jump on it!  And boy was it worth it… KILLER marinade, and I topped it with a perfectly fried egg and deliciously pickled veggies…. yum!

Lime Peach Chicken over Brown Rice

Chicken Peach Rice

  1. Mix 2 Tablespoons Lime Juice, 1 Tablespoon Vegetable Oil, 1/2 teaspoon smoked paprika in a bowl.  Season to taste with salt and pepper.
  2. Add 3 thinly sliced peaches, 1/2 of a thinly sliced red onion, 1 Tablespoon mined jalapeno and 2 cups cooked shredded chicken. Toss well to coat.
  3. I served it with cilantro over brown rice, although you could also serve in butter lettuce cups as well. Enjoy!
