Slow-Roasted Chipotle Salmon with Pineapple Cilantro Rice

One of my favorite parts about getting older is seeing how my sisters and I have applied what my parents have taught us.   Growing up, family dinners were a nightly occurrence, and thus cooking has always been a big part of my (and my sisters) life.  I love that Taylor can open the fridge and put together a 5 star meal that not only is tasty but manages ONLY to be made with healthy ingredients… and then there is Kendall.  As you may have seen on her Instagram, is the queen of presentation and delicious meals. When she posted this picture last summer, I knew I needed to try this next time she was in a cooking mood.  Luckily for me, she was a couple weeks ago and whipped up this amazing dish – which I proceeded to document for next time I’m up to tackle this recipe.

*Mind you, she whipped this up after a long day of pool and sun… and all under an hour!  Everyone at the table couldn’t stop raving about it!  Also for those that don’t LOVE salmon, we made a couple servings with boneless, skinless chicken breasts, and it was just as big of a hit.

If You Feel Like Pina Coladas…

Well, because I am currently in overdrive on my “Spring Break Diet,” I am not indulging in Pina Coladas… le sigh.  BUT I am doing the next best thing, which is whipping up this amazing coconut body smoothing treatment.

Coconut Ginger Scrub

  • 1/2 cup ground rice (just give it a few seconds in your blender)
  • 1/4 cup coconut milk
  • 1/4 cup brown sugar
  • 1 1/2 Tablespoons freshly grated ginger

Stir until the ingredients form a paste.  Smooth onto your body using circular motions. Rinse and moisturize.

I like to then apply my favorite self tanner with this mitt.

Chicken Enchiladas

I was cleaning out my pantry and came across some TJ’s enchilada sauce that I hadn’t used yet… so I roughly followed this recipe (substituting enchilada sauce for salsa and putting chicken and cheese inside) and topped with avocado, olives and cilantro.

I love this blog and I love Banh Mi, so when I saw this variation (I typically make it with meatballs), I had to jump on it!  And boy was it worth it… KILLER marinade, and I topped it with a perfectly fried egg and deliciously pickled veggies…. yum!

Lime Peach Chicken over Brown Rice 

Chicken Peach Rice

  1. Mix 2 Tablespoons Lime Juice, 1 Tablespoon Vegetable Oil, 1/2 teaspoon smoked paprika in a bowl.  Season to taste with salt and pepper.
  2. Add 3 thinly sliced peaches, 1/2 of a thinly sliced red onion, 1 Tablespoon mined jalapeno and 2 cups cooked shredded chicken. Toss well to coat.
  3. I served it with cilantro over brown rice, although you could also serve in butter lettuce cups as well. Enjoy!
