I received some rhubarb in my Farm Fresh to You box (use code: WHIT1117 for $10 off!) and figured what better way to use it then in a fun seasonal cocktail?

Chopped Rhubarb

First I created a Rhubarb Simple Syrup…

  • 3-4 stalks of rhubarb, chopped
  • 1/4 honey
  • 1/2 water
  1. Bring ingredients to a boil in a saucepan.
  2. Once it comes to a boil, reduce to a simmer for 20 minutes.
  3. Let cool for a bit and strain through a fine mesh sieve.
  4. Store in the fridge until ready to use!

Now onto the cocktail…

Rhubarb Sour

  • 2 oz vodka or gin
  • 1 oz lemon juice
  • 1/2 – 1 1/2 oz Rhubarb Simple Syrup (adjust depending to sweetness preference)
  • Sprite/Club Soda/Lemon flavored Sparkling Water
  1. Mix alcohol, lemon juice and simple syrup into an ice filled cocktail shaker.
  2. Shake for a good 30 seconds, until shaker is frosty.
  3. Strain into an ice filled tumblr and top with soda.

Cucumber Grapefruit Spritzer

I was looking for something light, refreshing and festive for Easter brunch… here was our specialty cocktail for the day…

Cucumber Grapefruit Spritzer

  • 12 oz gin (I recommend Hendrick’s)
  • 2 Persian cucumbers
  • Grapefruit soda (3 cans/bottles)
  1. Slice cucumbers (no need to peel) and muddle in a glass.
  2. Top with gin and let sit overnight (or up to 3 days).
  3. When ready to serve, fill a low-ball glass with ice, 1 1/2 oz of infused gin and top with grapefruit soda.
  4. Garnish with a cucumber slice and drink up!

The Bee’s Knees

I’m all about classic cocktails, and I find it the easier the better when it comes to creating drinks for entertaining.  With my Meyer lemon tree in full “fruit mode”, I wanted to whip something up that I could add to my “party drink” repertoire.

A cocktail with a fun name never hurt either…

The Bee’s Knees 

  • 2 oz gin (I used Hendrick’s for a cucumber infused kick!)
  • 1 oz lemon juice
  • 1 oz honey syrup (1 oz honey + 1 oz hot water)
  1. Mix above ingredients in an ice filled shaker.
  2. Strain into lowball glass and enjoy!
  3. Garnish with an orange slice or halved kumquats.

Blood Orange Gin Fizz

Blood Orange Gin Fizz

  • 1 oz Gin
  • Juice of 1 Blood Orange
  • 1/2 tsp powdered sugar
  • 4 oz Club Soda
  1. Mix gin and blood orange juice together in a collins glass.
  2. Add powdered sugar and club soda for an instant fizzy treat!
  3. Indulge 🙂

Gin-ger Fizz

Cucumber Gin Fizz

After whipping up some “homemade ginger ale” kits for Christmas gifts, I had a little extra syrup and wanted to put it to good use!

Gin-ger Fizz

  • 1 oz Gin
  • 1 oz Ginger Simple Syrup
  • 1 oz Lime Juice
  • 2-3 inches of peeled cucumber

Muddle cucumber in a cocktail shaker (you really want to release the juices). Add lime juice, gin and simple syrup.  Shake thoroughly until chilled through.  Strain into an low ball glass and top with club soda and an XL ice cube.
