Philz Mint Mojito

A couple of months ago my sister introduced me to my first Philz coffee.¬† Sadly, I have to make quite a trek to sip on one, so I have resorted to whipping up my own…

Philz Copycat Mint Mojito

  • Coffee Concentrate
  • Mint Syrup
  • Milk or Cream
  1. I mixed about 8 oz of coffee with 2 tablespoons mint syrup and 2 oz of milk, but it totally comes down to preference – whether you like it sweeter, less concentrated, etc.

For a less “G rated concoction, simply add a shot (or two) of Kahlua and stir – this is Fun Drink Friday after all! ūüôā

I came across this Cold Brew Coffee Concentrate at Trader Joe’s and was excited to find something to take the work out of iced coffees this summer.¬† If you want to make your own, simply (or not so simply) follow these steps.

The mint simple syrup is another easy one.¬† Just mix 1/2 cup of boiling water with 1/2 cup sugar and a large bunch of mint (one whole portion you would buy at the store).¬† Stir until sugar dissolves and let steep 5-10 minutes or until syrup is very minty tasting… you just don’t want to leave it for a long period of time for fear of it becoming bitter (fyi).

Once your syrup and concentrate are ready just add milk (coconut milk would be a great non-dairy option), stir and enjoy!

I received some rhubarb in my Farm Fresh to You box (use code: WHIT1117 for $10 off!) and figured what better way to use it then in a fun seasonal cocktail?

Chopped Rhubarb

First I created a Rhubarb Simple Syrup…

  • 3-4 stalks of rhubarb, chopped
  • 1/4 honey
  • 1/2 water
  1. Bring ingredients to a boil in a saucepan.
  2. Once it comes to a boil, reduce to a simmer for 20 minutes.
  3. Let cool for a bit and strain through a fine mesh sieve.
  4. Store in the fridge until ready to use!

Now onto the cocktail…

Rhubarb Sour

  • 2 oz vodka or gin
  • 1 oz lemon juice
  • 1/2 – 1 1/2¬†oz Rhubarb Simple Syrup (adjust depending to sweetness preference)
  • Sprite/Club Soda/Lemon flavored Sparkling Water
  1. Mix alcohol, lemon juice and simple syrup into an ice filled cocktail shaker.
  2. Shake for a good 30 seconds, until shaker is frosty.
  3. Strain into an ice filled tumblr and top with soda.

The “See Ya Later”

I whipped up this little number with some leftover grapefruits from my Farm Fresh to You box (use code WHIT1117 for $10 off!) and was pleasantly surprised by the positive feedback! This turned into the drink of choice for Memorial Day Weekend… we highly recommend it for your next pool day!

“See Ya Later” Grapefruit Cocktail

  • Juice of 2 Grapefruits
  • Juice of 2 Limes
  • 2 cups Vodka
  • 1/2 cup Elderflower Liqueur (St. Germain)
  • Club Soda (optional)

This recipe doesn’t get any easier… Simply mix all of the above ingredients (except the club soda) and serve over ice.¬† Top with club soda if you don’t like your drinks as strong… but be careful… this one sneaks up on you!

Mint Margarita

Mint, cucumber and lime are always my go to with vodka… but to try it with tequila was next level. ¬†This margarita is the answer to all of your spring gatherings. ¬†MAKE IT… NOW.

Mint Margarita 

  • 1.5 oz silver tequila
  • 1 oz St. Germain
  • Juice of 1 lime
  • Handful of mint
  • Club Soda
  • Agave
  1. Muddle mint leaves in a cocktail shaker.
  2. Add ice, tequila, St. Germain and lime juice to shaker.
  3. Give a few good shakes until shaker is icy.
  4. Strain into a crush filled ice glass.
  5. Garnish with mint.

Cucumber Mojito

I whipped up a batch of cucumber infused vodka and wanted to find some fun drinks to try it in.

Cucumber Mojito 

  • 2 oz cucumber-infused vodka
  • 1 persian cucumber, diced
  • handful of fresh mint leaves
  • 1 tablespoon agave nectar
  • juice of 1 lime
  • club soda
  1.  Muddle mint, agave, cucumber and lime juice in a cocktail shaker for 30 seconds.
  2. Strain the liquid into an ice-filled cocktail glass.
  3. Mix in vodka and stir.
  4. Top with club soda.
