My latest addiction = shredded chicken.

It is SO easy to prepare and there are hundreds of tasty recipes to use it in!

Sunday night put boneless, skinless chicken breasts in a crockpot and cover with chicken broth).  I turn it on high for 4-6 hours or you could could cook on a high for 2-3 hours then cook on low while you get your beauty sleep 🙂

After the chicken is cooked through simply grab two forks and start shredding… or if you are me, give it to your husband to prepare!

Here are some of my favorite shredded chicken recipes right now (simply make all of your chicken at the start of the week and use in the recipes all week long!):

Crock Pot Love

It was a relaxing and productive Labor Day weekend at the Beavers… Some highlights: my first Crock Pot dish – a Chipotle Barbacoa copycat recipe (JB’s favorite), picking up some GORGEOUS baby pink roses and cally lilies at the farmers market, having Jeremy’s mom over for a belated birthday dinner, laying poolside and BBQing with all of my college roommates and our boys 🙂 and making those adorable sprinkled chocolate dipped pretzels! 3 day weekends are a real treat!

I’m working on learning the art of “quick dinner parties.” Sunday was a long, productive day (Bloody Mary brunch, gardening, house deep cleaning) and we still had time to have my family over for Sunday dinner! Sunday morning I marinaded chicken souvlaki and refrigerated it while we scrubbed and dug all day. After a quick shower I whipped up a Greek salad (using all farmers market finds – cherry tomatoes, mini cucumbers, bell peppers, red onion, dill and Valbreso feta with fried olive bread and olives), grilled chicken souvlaki and peppers, and rice. Served outside on our patio with a Patz and Hall chard… It was the perfect summer night! Opa!
