I was visiting CVR, when one of our favorite bartenders – Carlos, suggested I whip up this little number for the blog… enjoy!

Note: As many of my cocktails go… this is meant to be served up (in a martini glass), but for an extra refreshing spin, serve on the rocks and top (generously) with club soda (as pictured).

Truffle

Truffle4

I first found out about Truffle from one of my PopSugar Must Have boxes and loved the concept.  A transparent pouch that you could use as a clutch or to help organize your purse? I’m in.

I have an original Large Clarity Pouch and love to bring it to the beach to keep my phone, wallet, keys, and Chapstick  sand-free.   It’s great for transferring all of my staple purse items to and from my different handbags (I’m a chronic bag switcher and it helps me to make sure I’m never without a hair tie, nail file, lip balm…).  While it’s perfect for carry-on bags, beach bags or any of my XL purses, my only complaint is it is on the larger size for use in my everyday bags.

When I saw they came out with a new line of goodies – the Clarity Clutches, I knew I needed to get my hand on them. I love the sleek look and fun pastel colors, and was excited to get my hand on a smaller size to use for some of my smaller purses.

Navy Pants 6

I used to give my mom a hard time about liking an article of clothing, then buying it in every color.  So needless to say, I was a little shocked (when cleaning out my closet), to see that the apple hasn’t fallen far from the tree.  Halogen pencil skirts – I own 8, J.Crew Minnie Pants – I own 5, and now these drapey pants – I own 6. Ugh.

Navy Pants 2

While I’ve shared my love for them here and here, I have realized I am finally at a point in my fashion evolution where I want to be comfortable.  Now don’t get carried away, you won’t find me around town in sneakers and a hoodie anytime soon (unless its Lulu), but I am learning that you can be fashionable and comfortable too…

Zucchini Patty Pita

July 28, 2014

Zucchini Pita 14

As I wrote the title of this post I realized that while it may be catchy, it may not be the most appetizing option.   But if you make this dish, I promise you, it will more than make up for it…

Zucchini Pita 2

Zucchini Patty Pita

Patty:

  • 1 zucchini, grated
  • 1 15.5 oz can chickpeas, drained and rinsed
  • 1 cup plain breadcrumbs
  • 1 small red onion, grated
  • 1 egg, lightly whisked
  • 1/4 cup EVOO
  • 1 teaspoon coarse salt

Fillings:

  • Whole wheat pitas
  • Tzatziki or Greek yogurt
  • Hummus
  • Chopped heirloom tomatoes
  • Cucumber slices
  • Lettuce leaves
  • Mint leaves
  • anything else you can think of!
  1. Mash chickpeas in a medium sized mixing bowl until smooth.
  2. Stir in zucchini, red onion, breadcrumbs, egg and salt.
  3. Form mixture into patties (the sized of a hamburger patty)
  4. Saute patties in olive oil until golden and crispy (about 3 minutes a side)
  5. Serve patties in pitas filled/topped with whatever your heart desires (I love lemon hummus, cucumber slices, chopped tomato, torn mint and a dollop of tzatziki -yum!)

My favorite thing about this dish (aside from the taste) is how easy it is!  It’s turned into my go-to meal option for those nights where I just don’t feel like cooking (and don’t feel like figuring out takeout options).
