     I went into Target yesterday to pick up some string lights for our patio.  The woman at the entrance greeted me and asked if I would like a cart… I declined her offer, because I only was going to need a couple boxes of lights.   Well, I’m sure you all know where this is going… a few minutes in I was already scouring the aisles for a neglected shopping cart (my pride is too much at times sadly).   Fast forward an hour, and I remembered why I only let myself go there a few times a year.  My cart was piled high with so many goodies and I couldn’t wait to get home to give new homes to all of my finds… check out some of the things I scored above like the $25 gold crocodile tray and super cute sandals (please excuse the metallic moment I was having)!

Ricotta Stuffed Squash Blossoms

Squash Blossoms

I had my first fried squash blossoms in Napa many years ago, and still think about them…  So when I spotted squash blossoms at the farmers market this past week, I jumped on the opportunity to try my hand at recreating this recipe.  I used a Ziplock bag to pipe the cheese picture into the blossoms, and then brushed batter on them and fried for a couple of minutes.  It is definitely important to work in batches, or you will brown the blossoms in the later batches like I did (not a cute look).  Dip in some yummy marinara sauce and you have the perfect starter to any Italian meal!

Last weekend I checked off #3 on my Summer To Do List – go berry picking at Swanton Farms!  We turned it into a sister date and made a morning of it… We started with coconut tea at Verve Coffee Roasters, grabbed Croque Madames at The Buttery, then made our way to Swanton Farms for olallieberry/tayberry picking and shortcake/cobbler/pie tasting.  The gorgeous coastline made for the perfect backdrop for a perfect day!

Pasta Alla Carbonara – This was a super easy and yummy dish!  I love taking a very standard dish of basically bacon/eggs/cheese and using pancetta/eggs/pecorino romano makes it seem so much more chic.  Paired with a light salad this is the perfect meal. 178 180 192

Skillet Glazed Pork Chops with Caprese Couscous – Trader Joe’s boneless pork chops are a great option for a cheap and easy dinner.  It’s $5 for 5 cutlets and they cook in under 5 minutes.  Doesn’t get much better than that! Except for when you top them with a maple/dijon glaze 🙂
