An easy but tasty dinner option… great for those days where you’d rather be by the pool than in the kitchen (ok, so that’s everyday… but you get the point).
Ingredients
- 1 lb boneless, skinless chicken breast
- 2 cups buttermilk
- 2 cups cornflakes
- Flour tortillas
- Lettuce
- Cucumbers
- Carrots
- Blue Cheese
- Greek Yogurt or Blue Cheese Sauce
* can also make with ranch instead of blue cheese
- Cut boneless, skinless chicken breast into bite sized pieces.
- Add buttermilk and chicken to a Ziplock bag and let “marinate” overnight.
- In a separate Ziplock bag, crunch up cornflakes.
- Dip chicken pieces into cornflake crumbs until fully coated.
- Place coated chicken pieces on a greased cookie sheet and bake at 375* for 15 minutes.
- Remove chicken and assemble wraps with:
- Flour tortillas
- Sliced cucumbers
- Lettuce
- Carrots
- Blue Cheese crumbles
- Blue Cheese sauce (you can make yourself by mixing Greek Yogurt with Blue Cheese crumbles)
