I came across this salad a few months ago and have been addicted ever since. I can’t believe I haven’t shared it yet, because my routine as of late, has been to go to the farmer’s market and get 3 bunches of kale for $5 and whip up this salad Sunday night for work lunches for the week.
I love this salad for many reasons… mainly because a. it tastes great, b. it’s easy to make, and c. you can make it days before you eat it (how many salads can you do that for!?).

*It is also recommended that you don’t use any paper-like leaves in your salad… so tune in next week to see what you can do with that leftover kale!

As you know, this is my FAVORITE kale salad as well. I make it at least 2x a week if not more. I need to try it with the ricotta salata. Have you tried my ricotta salata salad yet? It’s just as easy and tasty, and the minced shallots really bring out the flavor in the ricotta salata. I love how you put the salad in those cute bell jars for lunches throughout the week. I’m totally going to do that. It just makes me want to eat a salad out a jar! xoxo, Jackie
Ahhh yes I love your ricotta salata salad too (I switch it up between the two)! The mason jars are great because the glass is a healthier storage option and it makes lunch a little more fun than eating out of Tupperware 🙂 I just spent my Sunday afternoon following your “how to store greens” tutorial for all of my farmers market kale!
